
Nicole’s Hit Salad
This is the recipe for my hit salad – a very quick recipe for lunch.
Ingredients:
Two large handfuls of baby spinach – raw & washed
1 can of chick peas – rinsed
8 small goat cheese balls in olive oil – half the balls to make them go further ?
1 cup(uncooked weight) of cooked quinoa
4 tablespoons of pomegranate seeds
Top with sprouted mung beans – optional
¼ fresh green pepper (capsicum)
¼ raw chopped white onion
Dressing: Sea salt and cracked pepper and juice of 1 lime (plus olive oil from goat’s cheese container)
