Raw Chocolate Energy Balls

Very easy to make and stores in the fridge for at least a week. A great way to satisfy a chocolate craving and kids and adults alike love them.

Ingredients:

2 1/2 cups pitted dates
1 cup almond meal/powder
1/2 cup raw cocoa powder
1/4 cup black currants (or white) or for something really special use semi-dried cranberries
2 tablespoons of melted coconut oil (add gradually after all other ingredients are mixed and stop adding if the mixture already sticks together well)

Method:

  1. Process in food processor (be patient as the dates can clog up the blades).
  2. Take a tablespoon of mixture and roll in your hands into balls – or make them any size or shape you wish
  3. Keep refrigerated.
  4. If travelling or putting them in a lunchbox or handbag – roll them in crushed nuts, sesame seeds, desiccated coconut etc – this will ensure that they don’t stick together as they warm up.
