Maca Pistach Bliss Balls
3/4 cup raw cashews
1/4 cup raw pistachios – shelled (or alternative nut of choice e.g.: macadamia nuts)
12 medjool dates – pitted
1/4 cup shredded coconut, unsweetened
2 teaspoons maca powder (this has a distinct flavour and if you are just starting out using it then make sure these are level teaspoons and not heaped)
1 tablespoon coconut oil – melted
(1/4 cup pistachios, chopped, for rolling finished balls in – optional. could also use other crushed nuts, sesame seeds or desiccated coconut)

Super easy and quick. Put all ingredients in a food processor, smash until it’s the consistency you like, then scoop out small portions, roll in balls and roll into the crushed nuts. Put in the fridge for 15 minutes. Enjoy.
